Chef Ando made a special appearence on the local NBC Channel 6's program "207".
Miso Mustard Sauce
7 oz Miso
2 tsp Mustard Powder
1 oz Sake
2 oz Mirin
3/4 cup Sugar
Preparation:
Lightly sear all side of one filet of fresh Tuna in a small amount of olive 
Combine all ingredients for miso sauce in a metal mixing bowl over a hot water bath, whisking until sugar melts.
Slice tuna into thin slices. Arrange on a plate over a bed of salad greens. Drizzle sauce over tuna slices.
